I love lazy mornings, when time seems to slow down and deserves to be started with a simple treat – syrniki. In a few simple steps, you can turn cottage cheese, an egg, a pinch of sugar, and flour into a soft dough.
Then, in the hot pan, the golden magic appears: pancakes with a crispy exterior and a soft interior, perfect with a cup of tea or coffee. A light and comforting dessert.
Ingredients
- 5% cottage cheese1½ cups
- Eggs2
- Sugar⅓ cup
- Flour⅔ cup
- Vanilla
- Vegetable oil

Method
- Mix the cottage cheese with the eggs and sugar.
- To obtain a homogeneous mixture, use an immersion blender.
- Then add the sifted flour and vanilla. It is important not to add too much flour, as the syrniki will lose their cheese flavor. Instead of flour, you can use semolina, but if you use too much, the dish will be dry.
- With wet hands, take a small portion of dough, form a round syrnik, flatten it slightly, and place it on a hot pan with vegetable oil.
- Fry the syrniki until they are ready. To prevent the inside from remaining raw, you can cover the pan with a lid. Serve the aromatic syrniki with berries, condensed milk, or jam.
