Want a quick and tasty breakfast? Banana pancakes are awesome! They’re fluffy, have a sweet banana flavor, and are super easy to make. You don’t need a lot of ingredients. You can eat them plain or with honey, sour cream, yogurt, or fruit. Kids love them, and they’re perfect if you want something sweet but without sugar.

Method

  • Heat the milk whey to a temperature of approximately 30 °C and pour it into a large container so that it can be mixed more easily.
  • Add the egg to the warm whey and beat gently with a whisk.
  • Add the sifted flour and mix the mixture well.
  • Peel the banana and mash it with a fork until you get a smooth puree.
  • Add the mashed bananas to the mixture. Mix again.
  • Add psyllium to the bowl and mix again.
  • Let the dough rest for about 10 minutes so that all the ingredients combine.
  • Spray the pan with vegetable oil and place it on the stove. Using a spoon, place the prepared mixture in the heated pan. Cook over medium heat for about one minute.
  • Flip the pancakes over and cook them until they turn golden brown.
  • Serve the pancakes warm, with sour cream and berries. They are airy, flavorful, and incredibly delicious.
