In a bowl, add the butter melted in the microwave or in a saucepan, then add half a teaspoon of salt.
Add the powdered sugar.
Add the vanilla sugar.
Zest the two lemons.
Add the lemon zest to the bowl and mix with a mixer on low speed.
Add an egg.
Add the juice squeezed from the two lemons, strained through a sieve to remove any seeds.
Mix the flour, baking powder, and baking soda in a separate bowl.
Add the flour mixture to the batter.
Stir well with a mixer until smooth. Place the dough in the refrigerator for 3 hours, covered with plastic wrap.
Form small balls from the dough with wet hands and roll them in powdered sugar.
Roll the balls in powdered sugar so that they are generously coated on all sides.
Arrange the balls on a baking sheet lined with parchment paper, leaving space between them because they will rise and spread as they bake. Bake at 180°C (350°F) for 13-15 minutes.
After baking, let the cookies cool for 5 minutes, then transfer them to a wire rack to cool completely. Then serve these delicious, lemon-flavored cookies!
