Whip up a simple dough, stuff it with grated cheese, and cook until each turnover turns golden-crispy outside and ooey-gooey inside. These little pockets are perfect for breakfast with sour cream, a light salad, or even on-the-go snacking. Easy, satisfying, and utterly delicious—Romanian charm in every bite.
- For the dough:
- Kefir or buttermilk1 1/4 cups
- Eggs1 pc
- Salt1 tsp
- Sugar1 tbsp
- Butter1 1/2 tbsp
- White flour3 ½ cups
- Baking powder2 tsp
- For the filling:
- Grated hard cheese3 cups
- Eggs1 pc
- Pour the kefir into a bowl.
- Add an egg.
- Add a teaspoon of salt.
- Add a tablespoon of sugar.
- Melt the butter in the microwave and pour it into a bowl.
- Mix the mixture with a whisk.
- Measure out 450 grams of flour and mix with a 10-gram packet of baking powder. Pour into the mixture.
- Knead the dough.
- Grate the hard cheese using a coarse grater. Add an egg to the cheese and mix.
- Form 4 balls from the cheese.
- Transfer the dough to the work surface. Sprinkle a little flour to prevent sticking and cut into 4 pieces.
- Form 4 balls from the cut dough.
- Roll out the dough ball with a rolling pin and place a ball of cheese in the middle.
- Bring the edges together.
- Press the edges firmly so that the filling does not spill out.
- Sprinkle a little flour on top and roll out gently with a rolling pin. Repeat with the remaining 3 balls of dough.
- Heat a non-stick frying pan without oil; the pan must be dry. Then place the pie in the pan. Fry for 3-4 minutes over low heat.
- Turn over and fry for another 2-3 minutes.
- Transfer the pies to a plate and brush them with a little butter.
