  • Using a blender (immersion or stationary), beat the cottage cheese together with the condensed milk and egg until smooth. The mixture should be fairly liquid.
  • Mix the coconut flakes into the cottage cheese mixture, along with the rice flour and baking powder.
  • After mixing thoroughly, spread the resulting mixture into silicone molds (be sure to grease them lightly with oil) and immediately place them in the microwave. You can put the mixture into one larger mold. Set the power of the appliance to 700 watts and the cooking time to 7 minutes. By the way, don’t forget to cover the filled molds with a lid.
  • A little patience and our fragrant, very soft and delicious muffins with coconut flakes are ready.
  • Remove them from the molds and leave them on a wire rack for a few minutes to cool.
  • In the meantime, let’s make some tea and enjoy the most pleasant meal.

  • By the way, you can also bake these muffins in the oven at 180 °C, baking them for 23-25 minutes.
