Method

  • In a deep bowl, add the eggs and sugar.
  • Add the milk and mix with a whisk or mixer.
  • Add the softened butter.
  • Add the vanilla essence and stir the mixture.
  • Add the flour and baking powder.
  • Mix well until smooth.
  • Add the jam to the mixture.
  • Mix the jam with the mixture using a spatula.
  • Grease a muffin tin with melted butter using a pastry brush and place it on a flat baking tray. Add the mixture with a spoon, filling the muffin cups 2/3 full, as they will rise during baking. This quantity of ingredients makes 17 muffins.
  • Bake the muffins in the oven at 180°C (350°F) for 18-20 minutes. Finally, sprinkle the muffins with powdered sugar. Enjoy!
