Potato stew with pork and vegetables, cooked in a pot, is very tasty. You can use any kind of pork; I used tenderloin. Pork potato stew combines tender pork chunks and diced potatoes simmered with onions, carrots, bell pepper and tomato flavors.
This dish delivers balanced protein and carbs in one bowl. It’s ideal for family dinners, especially when you want warmth and flavor with minimal fuss.
Ingredients
- Pork tenderloin10.5 oz
- Potatoes1½ cups
- Onion1
- Carrot1
- Green bell pepper1
- Red bell pepper1
- Salt, aromatic peppercorns, thymeto taste
- Bay leaves2
- Vegetable oil
- Water

Method
- Wash the pork and cut it into small pieces. Place the meat in a pot without oil and turn on the stove to medium heat.
- Cook the meat for 5 minutes, stirring occasionally.
- Chop the onion and carrot, and add them to the pot.
- Chop the bell pepper and red pepper, and add them to the pot. Pour in a little oil, and cook over low heat for 10 minutes.
- Cut the potatoes into cubes and add them to the pot.
- Pour enough water to cover the ingredients.
- Sprinkle with salt, thyme, and add bay leaves and aromatic peppercorns. Cover and cook over low heat for 50-60 minutes.
- The pork and potato stew is ready. Enjoy your meal!
