Salted biscuits, also known as homemade crackers, are a simple, crunchy, and very versatile snack. They are easy to make from common ingredients and can be flavored according to preference. They are ideal for snacks between meals, cheese platters, or with dips. This recipe produces thin, well-baked crackers with a crunchy texture and balanced flavor.
Unlike commercial varieties, which are often full of preservatives, hydrogenated fats, or excess salt, making your own crackers gives you complete control over the ingredients.
Tips for perfect texture:
- Roll out the dough as thinly as possible if you want very crispy crackers.
- Do not knead excessively: the less you work the dough, the more tender the crackers will be.
Ingredients
- Flour2 cups
- Vegetable oil5 tbsp
- Water or pickle brine7 tbsp
- Onion1 pc
- Vegetable oil1 tbsp (for frying the onion)
- Salt
- Baking powder½ tsp
- Seasonings (tarragon, cumin, black pepper, paprika)

Method
- Finely chop the onion. Fry it in vegetable oil, adding a little salt. The onion should not be fried until it turns dark. It should become slightly golden. Allow the onion to cool.
- Mix the flour with the spices and baking powder. If you are preparing the dough with water, add half a teaspoon of salt. Then pour the water (brine) and vegetable oil into the bowl with the flour, then add the onion.
- Knead the dough and let it rest for 10 minutes.
- Divide the dough into two parts: this will make it easier to work with.
- Roll out each piece of dough into a rectangle with a rolling pin. If desired, you can sprinkle sesame seeds over the dough.
- Cut the dough into thin strips. Place the dough strips on a baking sheet lined with parchment paper. Bake until done. I baked them at 170°C for 30 minutes. Your oven may bake faster if you increase the temperature by ten degrees. Open the oven after 15 minutes and check if the biscuits are ready.
- The crackers are delicious when served with sour cream sauce.
