How to make crispy cocoa cookies without sticky dough
The base is a mixture of dry ingredients (flour, cocoa, sugar, baking powder) with soft butter (at room temperature). Then add the egg and, very importantly, 2 teaspoons of cold water. The cold water serves to gradually bind the dough without making it too soft at first.
The dough should be kneaded until it no longer sticks to your hands. If necessary, add a little more water, but gradually. This will give you a ball of dough that is easy to divide into equal portions.
Flattening with baking paper and a glass: why it works
Flattening is done with a small piece of baking paper folded in half, placed over the ball, then pressed with a glass until a flat biscuit emerges. This method has an advantage: it prevents the dough from sticking to the glass and keeps the surface of the biscuits smooth.
The fact that the biscuits are flattened evenly helps them bake consistently in 14–16 minutes, without significant differences between the edges and the center.

Method
- In a bowl, add: flour, cocoa, sugar, baking powder, and butter at room temperature.
- Combine the ingredients by hand, or you may use a blender.
- Add an egg.
- Add 2 teaspoons of cold water.
- Stir well and knead the dough, then form a ball. If necessary, add a little water, but it is important that it does not stick to your hands.
- Form small balls from the dough and place them on a baking sheet lined with parchment paper. This amount of ingredients made 15 balls.
- To flatten the biscuits, use a small piece of baking paper, folded in half, which you place over the dough ball, then press down lightly with a glass until you get a flat biscuit.
- Bake the cookies in a preheated oven at 180°C for 14-16 minutes.
- The delicious cocoa cookies are ready. Sprinkle with powdered sugar if desired.
