- Chop the onion and grate the carrot. Fry the vegetables in a pan with preheated oil.
- Wash the rice in several changes of water until the water runs clear.
- I used ground chicken, but you can also use ground pork.
- In a large bowl, place the washed rice and minced meat.
- Add the mixture of roasted onions and carrots.
- Add a teaspoon of salt.
- Sprinkle ground black pepper to taste.
- Mix everything with your hands.
- Cut off the top of the pepper and remove the seeds from inside. Keep the top, you will need it for simmering.
- Stuff the peppers with the prepared filling.
- Arrange the stuffed peppers in a pot, facing upwards.
- Place the cut tops over the stuffed peppers.
- Pour tomato juice into a jug of water, then stir gently with a spoon.
- Pour the mixture of water and tomato juice into the pot with the stuffed peppers, enough to cover them.
- Put the lid on the pot and turn the stove on high heat to bring the water to a boil, then turn the stove down to medium heat, and boil the peppers for about an hour.
