Chicken Gizzards Goulash

Ingredients

  • Chicken gizzards2 ½ cups
  • Filtered water (for boiling gizzards)4 cups
  • Filtered water (for sauce)1 ¼ cups
  • Onion1
  • Carrot1
  • Vegetable oil1 tbsp
  • Dried herbs½ tsp
  • Garlic powder½ tsp
  • Fresh herbs of your choice (dill, parsley, arugula)
  • Salt and ground black pepper

Method

  • Wash the chicken gizzards, remove the membranes, and boil them in 1 liter of salted water for 25-30 minutes.
  • Cut the cooked gizzards.
  • Peel the onion and cut it into quarter rings.
  • Peel the carrots and grate them using the coarse side of a grater.
  • Place the chopped onion in a hot pan with vegetable oil. Fry over low heat until lightly browned.
  • Add the grated carrots to the pan along with the onions. Continue cooking for about three minutes.
  • Add the chopped gizzards to the vegetables and mix well.
  • Pour in the water, mix and add salt to taste.
  • Add the herbs, ground pepper, and dried garlic to the pan. Mix well again and leave covered for about 5-8 minutes.
  • Chicken gizzards cooked in a rich goulash sauce
    Serve with your favorite side dish and fresh herbs.
