Chop the onion and grate the carrot. Fry the vegetables in a pan with preheated oil.
Wash the rice in several changes of water until the water runs clear.
I used ground chicken, but you can also use ground pork.
In a large bowl, place the washed rice and minced meat.
Add the mixture of roasted onions and carrots.
Add a teaspoon of salt.
Sprinkle ground black pepper to taste.
Mix everything with your hands.
Cut off the top of the pepper and remove the seeds from inside. Keep the top, you will need it for simmering.
Stuff the peppers with the prepared filling.
Arrange the stuffed peppers in a pot, facing upwards.
Place the cut tops over the stuffed peppers.
Pour tomato juice into a jug of water, then stir gently with a spoon.
Pour the mixture of water and tomato juice into the pot with the stuffed peppers, enough to cover them.
Put the lid on the pot and turn the stove on high heat to bring the water to a boil, then turn the stove down to medium heat, and boil the peppers for about an hour.
The stuffed peppers are ready. Enjoy your meal!
