In a hot pan with olive oil, fry the diced onion with the grated carrot.
Add the minced meat and washed rice to a deep bowl. I used minced chicken for a healthier option, but you can also use pork, beef, or a mixture of pork and beef.
Add the onion and fried carrot to the bowl.
Add salt, ground pepper, and other seasonings of your choice, and stir everything together.
Cut off the tops of the peppers and remove the seeds from inside. Fill the peppers with the prepared filling.
Transfer the stuffed peppers to a deep saucepan.
Mix 4-5 tablespoons of tomato sauce with water.
Pour the mixture of water and sauce into the saucepan with the stuffed peppers. Pour in enough water to cover the peppers. Cook the peppers over low heat for one hour and 10 minutes. If the water level drops significantly during cooking, add a little more water to cover the peppers.
The peppers stuffed with meat and rice are ready. Enjoy your meal!
