Cut the pork loin into small pieces, about 1 cm thick.
Place the meat pieces on an oiled baking tray sprinkled with spices and salt. Sprinkle salt and spices on top of the meat.
Slice the tomato, and place the slices on the pork medallions. You can cover the tomatoes with mayonnaise.
Shred the cheese and place it on top of the tomatoes.
Put the tray in the oven. Bake the medallions for 30 minutes in the oven at 170°. Serving the dish as a side dish. Mashed potatoes, pasta, or bulgur can be used as a side dish.
