Notes

  1. Use well drained cottage cheese so the mixture is thick; too much liquid will make it hard to shape the bars and they may fall apart when dipping.
  2. Do not skip the freezer time before glazing, slightly frozen bars hold their shape much better in warm chocolate.
  3. Melt the chocolate slowly over low heat or in short microwave bursts to avoid burning and keep the glaze smooth and shiny.
  4. If your kitchen is very warm, move the glazed bars to the fridge within a few minutes to prevent condensation and sugar bloom on the chocolate.
  5. For a less sweet version, use dark chocolate instead of milk chocolate and slightly reduce the powdered sugar in the filling.
