Place the sugar and butter at room temperature in a bowl.
Beat with a mixer on low speed until smooth.
Add the egg and vanilla sugar, and continue beating with the mixer.
Add the salt.
Mix half a teaspoon of baking soda with the flour.
Add the flour to the mixture and mix until smooth.
Finely chop 80% of a whole bar of dark chocolate.
Add the chocolate to the mixture and stir with a spoon or spatula.
Pour a little water into a deep plate to soak your hands so that you can shape the cookies into balls. Dip your hands in the water for each ball.
Preheat the oven to 180°C. Place the biscuits apart from each other, as they will increase in volume during baking. Bake for 10-12 minutes.
