Wash the chicken gizzards, remove the membranes, and boil them in 1 liter of salted water for 25-30 minutes.
Cut the cooked gizzards.
Peel the onion and cut it into quarter rings.
Peel the carrots and grate them using the coarse side of a grater.
Place the chopped onion in a hot pan with vegetable oil. Fry over low heat until lightly browned.
Add the grated carrots to the pan along with the onions. Continue cooking for about three minutes.
Add the chopped gizzards to the vegetables and mix well.
Pour in the water, mix and add salt to taste.
Add the herbs, ground pepper, and dried garlic to the pan. Mix well again and leave covered for about 5-8 minutes.
Serve with your favorite side dish and fresh herbs.
