The omelet can be baked in one large dish or in two individual dishes; here we make two portions. Grease the baking dish with butter, then add the cottage cheese, dividing it into two equal portions.
Dice the bell pepper and add it to the dish.
Crack two eggs into each portion.
Add the corn.
Sprinkle with salt and any seasonings you like.
Use a fork to mix all the ingredients together.
Sprinkle the top with coarsely shredded cheese. Bake the omelet in the oven at 350°F (180°C) for about 30 minutes.
Let the baked omelet cool slightly in the dishes, then transfer to plates and serve with fresh vegetables. Enjoy!
