Beat the eggs with the sugar and salt using a mixer until you obtain a foamy consistency.
Add the flour with the baking powder and vanilla, and mix with a spatula.
Peel the apples and grate them.
Line a 40x60cm rectangular baking tray with baking paper and grease with a knob of butter, then arrange the grated apples so that they cover the entire surface of the tray.
Pour the prepared mixture over the grated apples. Bake in the oven at 180 degrees for 15-20 minutes.
After the set time, remove the tray from the oven and turn it over onto the table, onto a piece of baking paper. Remove the baking paper on top of which it was baked, and using the baking paper underneath, carefully roll it up to form a roll.
Sprinkle powdered sugar over the roll, let it cool, then cut and serve. Enjoy!
