Start your morning on a cozy note with these fluffy kefir pancakes studded with sweet plums. Made without milk, this recipe uses warm kefir, a touch of sugar, a pinch of salt, baking soda, an egg, and flour to create a batter that’s soft and airy. Small pieces of dried plum are mixed in and gently cooked on a hot pan until golden and tender.
The result? Light, tender pancakes with pops of fruity sweetness—a perfect companion to a cup of tea or coffee. Simple, nostalgic, and irresistibly comforting.
- Kefir¾ cup
- Sugar1 tbsp
- Salt
- Baking soda½ tsp
- Prunes15 pc
- Flour1 cup
- Eggs1 pc
- Sunflower oil
- Wash the ripe prunes and leave them to dry in a bowl. Then, cut them into halves or quarters. Now, let’s prepare the dough for the pancakes.
- Pour the kefir into a saucepan. It must be warm. Add the rest of the ingredients: sugar, salt, and baking soda. Mix everything well.
- Now add 1 egg and mix well again. We will also add the flour. I wrote a conditional amount because you may need less.
- The dough should be oriented to the state of the dough. It should not be like thick sour cream, but not runny either.
- Afterward, pour vegetable oil into the skillet and spoon out the dough. On top of the dough, I put pruned pieces and spooned the dough on top again.
- Fry on both sides until a brown crust appears, preferably over low heat to allow the pancakes to bake well in the middle.
- Place on a plate and serve. Great for a light breakfast and as an afternoon snack, with tea or coffee, cocoa.
